Protein Toast
PREP TIME:5 minutes
COOK TIME:5 minutes
YIELD:1 serving
Ingredients
- 2 pieces ezekiel toast (or toast of choice)
- 1 small container of plain vegan yogurt
- 1/2 scoop of vanilla protein powder
- 1/4 c blueberries
- 1/4 c blackberries
- 1 tsp cinnamon
- 1 tbsp hemp seeds
Instructions
1. Combine protein powder and yogurt and mix well
2. Spread yogurt to toast and top with berries, cinnamon, and hemp seeds.
3. Serve and enjoy!
RECIPE #2

Cereal – Coco Pops Inspired

PREP TIME:5 minutes
COOK TIME:4 minutes
Ingredients
- 3 cups puffed rice
- 2 cups puffed quinoa (or just use extra puffed rice)
- 1/4 cup maple syrup
- 1/4 cup coconut oil, melted
- 2-3 Tbsp cacao
Instructions
1. Preheat oven to 150 degree celcius
2. Add puffed rice and quinoa to a large bowl
3. In a small bowl, combine maple syrup and coconut oil
4. Add cacao and mix
5. Pour over puff grains and mix well until completely coated
6. Spread mixture over a baking tray and bake for 4 minutes, mixing halfway through
7. Allow to cool and transfer to a sealable jar
8. Serve with choice of milk
RECIPE #3
Finally we have a gorgeous concoction called Chunky Monkey Baked Oats, from 30 Nourishing Vegan Recipes by Nourishing Amy.
Chunky Monkey Baked Oats

COOK TIME: 36 minutes
YIELD: 4 serving
Ingredients
For the Baked Oats: (measurement converter here)
- 1 ripe banana, mashed
- 2 tbsp ground chia or flaxseed
- 50g peanut butter, runny
- 240ml plant-based milk
- 1 tsp vanilla essence
- 150g rolled oats (GF if needed)
- 25g desiccated coconut
- 2 tsp baking powder
- Pinch of salt
- 10g chocolate chips
- 1 banana, sliced
Instructions
1. Preheat oven to 160Fan/180 *C and lightly grease a dish (approx. 6-inch square)
2. Whisk together the mashed banana, chia/flax seeds, peanut butter and vanilla until smooth. Now add in a rolled oats, desiccated coconut, baking powder and salt and stir well.
3. Pour into the dish, smooth over the top and add on the chocolate chips and sliced banana.
4. Bake for 30 minutes or until risen and golden.
5. Serve warm or cold with extra peanut butter. Store leftovers in a sealed container in the fridge for 2-3 days.
6. You can also freeze portions of the baked oats for up to 1 month and de-frost at room temperature.
To serve:
- extra peanut butter
