Recipes: A Kale-idoscope of Goodness!


Kale is one of the most nutrient-dense foods on the planet… This NB we feature 3 super fast, nutrient-rich kale recipes out of our own Plant-Based With EaseCookbook.

A single cup of raw kale (roughly 2.4 ounces / 67 grams) contains (1):

      • Vitamin A: 206% RDV* (beta-carotene)
      • Vitamin B6: 9% RDV
      • Vitamin C: 134% RDV
      • Calcium: 9% RDV
      • Copper: 10% RDV
      • Vitamin K: 684% RDV
      • Manganese: 26% RDV

Here are 3 fab drink recipes that feature kale, from our cookbook.

Kale-idoscope

Serves 1-2

Ingredients:
One bunch of your favorite kale
5 pears
1 lemon with peel

Instructions:
1. Juice in a juicer.
2. Serve immediately, or chilled.

You could also add or substitute strawberries, for an extra zinger. 

Note: If you’re using a blender then straining, you’ll want to remove the lemon seeds, then peel and deseed the pears beforehand. Some people prefer to also remove the most fibrous strings from the kale, too, but remember how good fiber is for you! 

Go-Go Green Juice

Serves 3-4

Ingredients:
1 large bunch kale, chopped
2 medium apples, chopped
½ lemon with peel, chopped
1 cup water

Instructions: 
1. Blend well in a blender.
2. Strain through a nut milk bag or sprouting bag.

Juicy Joint Lubricator

Serves 3-4.

Ingredients:
1 large bunch kale, chopped
2 medium apples, chopped
½ lemon with peel, chopped
1 cup water

Instructions:
1. Blend well in a blender.
2. Strain through a nut milk bag or sprouting bag.

This juice is good for making your joints more flexible. After juicing, drink fast before it oxidizes.
